Crazy Noodles Casserole

I’m pretty new at this whole “making up recipes” thing, so this casserole wasn’t perfect, but it was extremely comforting! But then again, when isn’t a recipe with pasta, tomatoes, beef, and cheese comforting? I did find that if you let it sit for a few minutes after bringing it out of the oven, the taste of the Italian seasoning “quiets down”  a little, and everything tastes a little more blended.

Ingredients:

  • 1 box Rotini pasta
  • 1 pound lean ground beef
  • 1 28 oz. can diced tomatoes, drained
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon McCormick’s Italian Seasoning
  • Salt & pepper
  • 2 cups shredded mozzarella cheese, divided into 1 cup portions

Directions:

  1. Preheat oven to 400°F. Brown beef in large sauté pan on medium heat. Drain and add back to pan.
  2. Boil pasta according to directions on box. While pasta is boiling, add tomatoes, garlic, Italian seasoning, and s&p to beef and warm through on medium heat.
  3. Drain pasta and place in large mixing bowl. If any juice is left in meat mixture, drain, and add to pasta. Add 1 cup mozzarella, and fold all ingredients together.
  4. Place mixture into 9×13 glass pan and sprinkle remaining 1 cup of cheese on top. Warm in preheated oven until cheese is melted, about 5 minutes.
  5. Enjoy!

It’s been a while, I know. I feel out of commission. LOL. Last week was SO busy!! I had a job interview at Churchville Elementary for their 3-5 music position and the Buffalo Gap HS band director position. I find out early June if I got the job or not. ::crosses fingers::

Because of that, I cooking hardly anything last week. This week is going to be an EASY week as I’m just not up to it, and we had plenty of stuff in the fridge/freezer to use up! So, here is our menu for this week:

#1: Hot dogs (all beef franks) with chips… Hey today is Memorial Day!!! Even though we don’t have a grill, we still cook the food that people should have on days like this 🙂

#2: Barbecue beef on whole wheat hamburger buns(brand = Lloyd’s…you can find it in the meat section of the grocery store) with fresh fruit on the side.

#3: Popcorn shrimp with a side salad.

#4: Egg Drop Soup (the only thing I HAVE to actually make on this week’s menu) with egg rolls and mandarin oranges.

#5: Grilled pork chops (rubbed with spices), green beans, and mashed potatoes.

So there it is… An easy week for me. Hopefully I’ll be back in the swing of things next week. Summer is here and that means lots of fresh veggies and herbs!

Poppin Fresh Barbecups

Poppin' Fresh Barbecups

1/2 lb. ground beef (browned and drained)
1/3 c. barbeque sauce
1 tbsp. instant minced onions
2 tbsp. brown sugar
1 can Pillsbury Grands Flaky Biscuits
8 oz. package shredded cheddar cheese

Preheat oven to 400 degrees. In a bowl, mix browned beef, bbq sauce, onions, and brown sugar. Separate biscuit dough into 8 biscuits. Place one biscuit each into ungreased muffin tin cups, pressing dough up sides to edge of cup. Fill dough cups with meat mixture; sprinkle each with cheese. Bake at 400 degrees for 10-12 minutes until golden brown.

Mmmm…. I love my family’s recipes. I’m not sure who made this one up, but it was most likely my grandmother. And it sure is delicioso 🙂
